Project background

This project is currently under construction. 

Lindsay Knollwood 2, LLC has applied for city approval to construct a Chipotle restaurant at the northwest corner of Highway 7 and Aquila Avenue South. The applicant proposes to change the future land use of the site from ROW - Right of way to COM - Commercial to allow for the development of a Chipotle restaurant with a drive-thru lane for pick up orders only. The conditional use permit application will allow for a drive-thru on the subject site and allow for off-site parking on the existing commercial lot to the north. The application is accompanied by a request to rescind the existing special permit for the existing commercial lot to the north (8530 Highway 7) and replace it with a conditional use permit to allow for more than one principal building on a lot and a drive-thru facility. 

Public meetings

  • Aug. 20, 2025 – Planning commission held a public hearing. No one from the public attended the meeting. One resident submitted comments via email. The planning commission recommended approval of the applications to city council with a 6-1 vote.
  • Sept. 2, 2025 – City council voted 5-0 to table the recommended actions until the Oct. 6, 2025, city council meeting. 
  • Oct. 6, 2025 – City council unanimously approved the recommended actions (6-0).
